DIY Gutter Bookshelves


I came across this post recently and thought it was so much fun that I just had to share it again!



My nephew just recently moved into his big boy room in anticipation for the arrival of his baby sister. This came with a lot of changes, a big boy bed, a couch and new organization for all of his toys. Once everything was said and done he was still in need of a place to keep his books organized, but his room was a little short on space for a bookshelf, so it’s time for my sister and I to get creative.

In looking around for functional, DIY shelves for little M she came across this tutorial by Raising Olives for gutter bookshelves: easy, affordable, functional and super snazzy! The perfect solution. So here’s how to make the shelves.

First we go to the hardware store (I know this is a strange place to get craft supplies, but there are a ton of awesome things at the hardware store). We pick up a ten-foot, vinyl gutter (not the easiest thing to carry around the store, by the way). In addition to the gutter we grab 6 end caps (you need two per shelf), and 6 brackets (also need two per shelf, unless your shelves are going to be longer than 5 feet, then three per shelf would be more stable).

We want three shelves out of our 10-foot gutter, so we decide cut the gutter into 3, four-foot sections using a handsaw (ok, well it was actually my brother-in-law who will cut it for us).



Once we get everything cut we wipe it down with mineral spirits (the spray paint can says to use paint thinner but all we have is a can of mineral spirits). This step removes any potential chemical residue from the production of the gutters.



Now that everything is prepped and ready to go we get to spray painting. My sister wants black because all of M’s furniture was black, so it would look great in the room, you can use whatever color you would like. We set everything up on a rubber maid tub covered in a drop cloth and get to spraying.



My sister is a spray painting pro, she teaches me that it’s important to use a lot of layers when it comes to spray painting; patience is key. The first layer hardly covers anything. Just keep going and until you get a solid covering. Let the paint dry and flip everything over and paint the other side.



Once everything is painted it’s time to put each shelf together. Slide in each bracket and then put on each end cap (this can be tough, but you’ll get the hang of it.)

Measure on the wall where you would like your shelves and put a mark where each bracket is. We put our brackets as far to the edge as possible to allow for as much space in the middle as possible. Using a screwdriver, screw through the holes in each bracket. This is hard to explain but is not very hard at all!

Once all your shelves are secure, load them up with books and enjoy!



I love the fact that you can see the fronts of all of the books, it makes it really easy for a little kid to see what book he’s picking out! And this is a great shelf for little kids because kid’s books are really thin and they can stack a few deep in each shelf!

Applesauce Oatmeal Muffins

Do you ever have those days where you have to make something for a brunch and you don't have any ingredients?  That's where this recipe came from.  Sometimes you just have to do what you can with what you have!

This recipe has a simple list of ingredients, things that I almost always have around my kitchen.  And these are delicious and *almost* healthy!  I used my square muffin pan for the first time, I really love the shape!

These are perfect to keep on hand for breakfast, or an afternoon snack!  Let's get these going!

Applesauce Oatmeal Muffins
Adapated from Eat Your Heart Out
Makes 18 muffins.

1 cup sugar
1/2 cup melted butter
2 eggs
1 cup applesauce
3 tablespoons heavy cream
1 teaspoon baking soda
1 1/4 cup whole wheat flour
1 cup rolled oats
1/4 cup vanilla sugar for topping

Preheat oven to 325.

In a medium sized bowl whisk together sugar, melted butter and eggs until smooth and a light shade of yellow.

Add the applesauce and heavy cream and mix well.  Make sure to scrape your bowl and get everything well mixed.

Next, add the baking soda, flour and oats.  Mix until all the oats are coated with the wet mixture and the flour is thoroughly mixed in.

Scoop into a greased muffin tin, filling each cup about 2/3 of the way full (you don't have to use a square tin, round muffins are great too!)

Bake for 20-25 minutes or until a toothpick inserted into the middle comes out clean.

When the muffins come out of the oven, allow to cool for about 5 minutes, removed from pan and dust with vanilla sugar.

10 Things I've Learned About Adulthood

This is a summary of a little journal entry I did.  I attended my last ever college class just under a year ago and it's been almost 6 months since I left my parents house.  I got a nice little crash course in being an adult (and clearly my 6 months of "adulthood" make me an expert...NOT) and these are someone of things I was forced to learn.

This has nothing to do with baking, but this is totally real life.  These are the tiny lessons that people don't always teach you.  The important parts of life.

1. First and foremost...PAY YOUR BILLS.  Pay day=pay bills day, even if that means paying them almost two weeks early.  It's better to be early than to be late.  If you pay everything you can right away, then you know how much money you have left to play with, it's a win-win, trust me.

2. Save some money.  You don't  have you go crazy but any little bit helps, try just 10 dollars a paycheck, maybe 10 percent.  The best way to do this is direct deposit, you'll hardly even notice that it's happening until you have a nice little stash of money...at least until your car breaks down that is (but that's why you've been doing this!)


3. Splurge.  In contrast to lesson number 2, sometimes you just have to splurge, pull a little bit out of savings, get that tattoo you've been wanting for four years, make a cheesecake (those get pricey), travel.  Do something that is memorable, something that's an experience, it's ok to splurge if it's something good!

4. Sometimes the answer can only be (fill in your stress eating food here).  Mine is French fries.  Just got in a fight with the family?  French fries.  12 hour work day? French fries.  It's unhealthy and it's not something I should do all the time, but sometimes it just has to happen.

5. Deal with stress.  Stress is inevitable.  You will face stress when you are living on your own.  You may only have 5 dollars in your bank account 4 days before payday, that sucks.  You might not always love your job, you and roommate might fight.  You no longer have papers to frantically write but there is a whole other sleuth of stress.  Learn to deal with it (and not just with French fries).  Go for a jog, take a kickboxing class, spend a night reading at a coffee shop, do something new.  Find a healthy way to deal with stress otherwise things could end badly for you (I REALLY need to work on this one).

6. Don't put up with people who treat you like poo.  If your boss doesn't appreciate you, start looking for a new job.  If your friend hasn't called you in 3 months and you keep trying to make plans with them and they keep canceling, maybe you should stop calling.  Know your worth and spend valuable time with people who appreciate that, people who desire to KNOW you.  You're worth a lot, don't let anyone tell you otherwise!

7.  Along those lines, never forget that you're beautiful.  You are, you're gorgeous.  Don't be afraid to dress up, throw on some heels, do something fancy with your hair and rock your gorgeousness.  Don't let the haters get you down, not everyone will think you're hot...they don't have you, you are so rock it.

8. Read books.  Remember all those books you didn't read in high school (or was that just me?)  Read them, it'll make you sound smart, or I guess maybe just make you smarter (people say that right?)  Join a book club, some of your friends might give you a hard time about it, but you're awesome so don't let them get you down.  Don't forget to read young adult fiction too!  I mean, you need to stay up with the times, right?  Also, hello awesome stories, strong characters and quick reads!

9. Travel!  You're young and have few responsibilities (ok a job is a big responsibility but you can figure it out).  Travel now, treat yourself to a graduation getaway, it's only going to get more complicated as you get older (kids will certainly complicated things, or so I've been told) so do what you can now!  It's SO worth it!

10. Be young, because you are.  Don't let the quote "youth is wasted on the young" be true in your life.  Sometimes it's important to take a sick day and spend it at a coffee shop flirting with a cute barista or going on a day trip to a nearby city.  Be young, have adventures, stay up too late.

Gone With the Wind

Do you ever have those days that you wish you could just be "gone with the wind."  I've been having a lot of those days recently.  It's building character and in the long run I know it will be good for me, but sometimes it would be nice if I could just run away.



Katie from Lemon Jitters gave us Denver/Boulder bloggers some lovely paper packs this weekend and there were these amazing little pinwheels in them, which was perfect for my mood.  So made my bad mood better by making a Smash book page out of it!



I LOVE the pinwheels.  They worked so perfectly and I love how they added a little bit of 3D to my page.  Katie also gave us these adorable little wooden pieces, so I made my little car look like it was driving off into the sunset!


I scattered some confetti on the second page and cut out my own pinwheel to really drive home the idea of "wind."  I really love how it looks!  I pretty much just poured it onto the glue so it's very random which is PERFECT!

This was a nice little bit of escapism, which I think we all need sometimes.  It took me out of my grumpy state of mind and into a wonderful world of creating and being able to go with the wind.  It was freeing and just what I needed!  I highly encourage art journaling if you've never done it, so fun!

Thoughts on Change

So here's the deal, I don't hate change, change is good.  Moving out of my parents house was good, it was a good change.  Changing positions at work was a good change (hard, but hard doesn't have to mean bad).

However, while that's all fine and dandy, I have a really hard time changing in other ways, like diet and exercise (oh, and spending money).

You see what happens is I always get so excited, I'm going to change EVERYTHING, and I do, and then I fail.  Which is why my new moto is 

And you know why?  Because if I stop eating hamburgers, french fries, ice cream, desserts in general, chips, etc all at once, then I'm going to end up having a HUGE binge after a month or so.  After that binge I will remember that I'm a failure and then give up.  Same goes for working out, I'll do a great job  going five days a week and then miss one day and quit. (On another note, same goes for money, I can't just stop spending, cause then I'll go on a spree, and that's never good).

Small changes, opting for the salad instead of the fries, not as a rule but as a CHOICE.  Doing yoga in my room at 11 at night because I just had to do SOMETHING, a choice, not a rule.

Obviously the end goal is change, healthier eating, more exercise, but I can't do it all at once, I will fail, it's just what happens to me.

Small changes, big results, I can do this!

Happy Monday!

How was your weekend lovlies?

I had a busy Saturday and a nice, lazy Sunday.  Also, I totally put a deposit on getting a tattoo!  My appointment is the day before Thanksgiving, I'm so nervously excited!

My good friend and I spent half the day Saturday in Golden, CO.  I'd never been to Golden so it was really fun to wander around and check out a new tiny town.  We stopped at the tattoo shop that I'm going to (I have a friend who got his tattoos done there, it's a Christian tattoo studio, which is why it's worth driving to Golden for.)  We grabbed some pretty decent panini's (mine was way better than hers).  We also stopped at this ice cream/candy shop that makes their own little candies!
Look how cute!  I always love candy shops and their little displays :)  The caramel truffle that I had was DELICIOUS.

After getting home from Golden, I got myself "all dolled up" to head up to a Denver/Boulder blogger meet up in Boulder!  I never have a good excuse to go hang out in Boulder, so I was excited, that and I got to me so many fabulous women!

Driving into Boulder, Colorado really knows how to do the sky right.

The meet up was super fun, I was so nervous all day about hanging out with this large group of people that I'd never met, what if they didn't like me, what if I didn't fit in, what if I was under/over dressed. Turns out that none of that mattered.  These girls were great and we all laughed and ate and crafted together.  Kim was so sweet and did such a wonderful job organizing this night.

Oh How I Love Baking

What do Monday night, Tuesday night and Wednesday night all have in common?  I baked, I baked delicious things that are so bad for you!  I love it so much I can't even get over it!  So what did I make? Well I already showed you my Rice Krispie treat platter, but here they are again.


I also made some "festive" Halloween goodies. (By festive I of course simply mean chocolate with orange frosting, hey people I used food coloring, I NEVER use food coloring.)


And then to top it all off, I made this.


It's my grandma's brownie recipe topped with a peppermint buttercream and peppermint ganache.  I mean my grandma's brownies are the best, but this pushed them just a bit over the top!  Are you wanting the recipe yet?  Ok here we go (I guess I can share this family tradition :))

Brownies
1 stick butter
1/4 cup cocoa
1 cup sugar
2 eggs
vanilla
salt
1 cup flour

That's it people, only 7 ingredients (really five if you ignore the vanilla and salt).  And, putting it together is just as easy!

Preheat oven to 375.  Grease a pie plate of 8x8 baking dish.

In a medium sauce pan, melt the butter.  When the butter is melted stir in the cocoa.  

Remove from heat and add in the sugar making sure to stir well.  Add in the eggs, one at a time, mixing well after each addition (usually I ignore the one at a time rule, but in this situation it's totally necessary, remember this mixture is hot people!)

And in vanilla and salt to taste.  Add half of the flour and mix well.  Add the last of the flour and stir until combined (this will be thick).

Pour the batter into your baking dish of choice.  Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.  Let cool.

Peppermint Buttercream
1 stick room temperature butter
1 tablespoon peppermint schnapps (or 1 teaspoon peppermint extract)
2 cups powdered sugar 

Beat the butter with a mixer until light and fluffy (about 2 minutes).  Add the peppermint schnapps and mix to combine.  Slowly add the powdered sugar, about 1/2 cup at a time until the mixture reaches a stable consistency.

Spread on top of the cooled brownies.

Peppermint Ganache 
1/4 cup heavy cream
1 tablespoon peppermint schnapps (or 1 teaspoon peppermint extract)
8 oz. dark chocolate, chopped into small pieces.


In a small sauce pan heat the cream and schnapps to just below boiling point.  Remove from the heat and add in the chocolate, stir until melted (if you need to put it back on the heat for a bit do so, just keep stirring).  

Pour on top of the buttercream and smooth all the way to the edges.  

Refrigerate overnight to solidify the ganache.  Slice into squares or wedges and enjoy!

Don't Worry, I'm Still Alive

Hello friends!

For those of you on the east coast I hope you made it through Hurricane Sandy safely and without too much trouble!  For those of you that have been around you know that I am from Denver, but would you believe that Hurricane Sandy made a mess of my life as well?  Not in a physical way but I do work on a TV show about hurricanes, so I've been working like mad for the past week and a half trying to get everything sorted out with Sandy.

So I'm still alive, I'm exhausted but I am doing just fine.  There has been a lot on my mind as of recently and I just keep fighting it, I don't want it to be true, I want to take the easy way out, be happy now and be done with it.  Have any of you ever felt that same way?


It's like, God put me at the beginning of this path and told me to walk this way, but there are all of these other, prettier paths that I would love to be walking down right now, paths that would give me comfort not and likely heartbreak later, paths that would cuddle me and eventually push me away.  But this path, the one that God told me to walk down, it's kind of lonely, it's not the prettiest and it's not always very comfortable.  It's hard, it's like the climbing the side of a mountain having no idea where the top is and being consistently tempted by the paths leading downhill.  I'm doing my best to stick to the "straight and narrow" knowing that in the end it will be the best.

In other news!  I've been baking, journaling, Smashing and what not.  Check out my trio of Rice Krispie Treats!

We have Oreo, Candy Corn and Crunch Berry!  I'm pretty excited about it to be honest, but there's a chance that these will all end up being a big pile of marshmallow and cereal, I didn't really think that through when I just piled them all on top of each other!  We'll see if we can get them apart tonight!

I don't think there's much else to share right now.  Sorry that I left you hanging out here all on your own, hope you didn't miss me too much.  It feels good to be back, better than expected actually!  I'm not going to make any promises just yet on how often I'll be around, I just have to go with the flow and figure that out, but thanks for being loyal and sticking around.  I've missed you!

This is Not a Recipe

So it's been dark here, and it's been dark here for a while and my first instinct is to apologize for that, but you know, that's what I needed.  I know it's silly, but I just needed some time to be away from the blog, to make sure that this was what I really wanted.

It's lovely that one of my blogger friends asked me to write a guest post for her lovely blog.  It made me remember how fun this can be if I let it, how imperfect of a science this is, because to be honest I have no idea what I'm doing.  But not knowing what you're doing can be good too, it's about learning and developing, not about being perfect.

So, there may be some changes around here, I'm still not certain how often you'll see me around here.  I'm not sure what the weekly schedule will look like.  There might be less recipes and more thoughts, or maybe just a wider variety of recipes, because you see I've learned that I'm awesome at making WAY more than just cupcakes.

I've learned that I'm more than just a baker, it's so easy to define myself as such, because I bake for my friends so often, but to be honest they love me even when I don't, it's on me to think otherwise.

I'm sorry that this post doesn't have any pretty pictures, or anything fun to take away from it, but I'm happy to be back, it feels nice to write and to chat with you all.  Thanks for reading my rambling.  See you around soon!

Cupcake Tuesday-Thoughts About Identity

I have unfortunate news for you.

There are no cupcakes today.  I haven't made cupcakes in about three weeks.

You see, the last time I made cupcakes I brought them to a church event, like I usually do.  But this was our anniversary party, and several other people had been tasked with the same request, bake and bring cupcakes.

Now, that should be fun right?  It means that I didn't have to bake 200 cupcakes, it means that I get to try out some others and it gives a chance for a variety of people to serve the church.

The problem is that this is not how I saw it.  I saw it as other people stepping in my territory.  As people continued to ask me if I made all of the cupcakes or tell me that their cupcake was delicious,  only to find out that it wasn't one that I made, a problem slowly arose.

I found my identity and my purpose in baking for others, and not only baking, but specifically baking cupcakes, and when that identity was challenged, I broke down.

After all of this, my good friend challenged me to maybe not make cupcakes for a month, or maybe longer.  She also challenged me to write down a list of ten reasons that God and others love me that had nothing to do with baking, or cooking.

Wow, that was a challenge.  It's only TEN things but it took me a couple of days to get the list completed, and even still, the list is incredibly general.  Things like "caring, hospitable, loyal" made it on the list, but what does that really say about me?  That there isn't anything specific that matters, outside of baking?

I'm still working through all of that, and I'm a little stuck.  So in addition to having a slight identity crisis over the past few weeks, I've been incredibly lackadaisical.  I haven't FELT like blogging, or cleaning, or getting off my couch a whole lot.  I still make it to work every day, but I just go home and crash and I'm not sure why.

All of this is to say that there isn't a cupcake recipe for you this week, and there may not be one next week.  I'm exploring my baking options.  Last week I brought mini scones to church and that was pretty fun, however people were kind of confused.  This week I'm brining chocolate covered marshmallows, so we'll see how people react to that.

I apologize for the long winded-ness of this, if you made it to the end, thank you.  And I would like to challenge you to realize that you are not what you DO but simply who you ARE and who God MADE you to be.  It's a hard thing to wrap your head around.

I am more than a baker, more than a Production Coordinator, more than a caring person, because I am a child of God and he created me to be more than any of that.  Now I just have to convince myself to BELIEVE that.

Cupcake Tuesday-Chocolate, Three Ways

Life is interesting.  The way you identify yourself is a challenge.  You can't really rely on what you do for a hobby or a job because that could always be taken away.  So how do you identify yourself outside of you actions?  What makes you, you?  

This has been taking over a lot of my thoughts recently, and I think it's an important question for all of us to ask.  Who are you?  I would love to hear about it :)

Now on to why you're really here, the baking :)

Due to my identity crisis I haven't made any cupcakes recently, I'm branching out ;)

But!  Just in case you missed it, here are three recipes you can make from my standard chocolate cake recipe!  Check that out!
These Chocolate Honey cupcakes are my standard chocolate cupcake topped with a delicious honey cream cheese frosting.  This cupcake recipe is the jumping off point for the next two recipes :)


These Black Forest cupcakes loving combine chocolate and cherry.  Some of the sour cream from the standard recipe is replaced with cherry preserves.  Delish!



My Malted Chocolate cupcakes will take you back to the good old days!  This shows that one simple addition can have a huge flavor change.  Just add a couple tablespoons of malted milk powder and ta-da!

Weekly Wrap Up

Hello beautiful!  Did you get Monday off?  I hope you did and I hope that you were able to enjoy a wonderfully short week!

My week was quite crazy (what's new) and so wonderful!  I had so much fun experimenting with games at work, going thriting on Monday (so many of the stores had 50% off sales!) and GETTING PROMOTED what what!?!  I'm super excited, I'll be working on a show called Hurricane Hunters starting on Wednesday!

I also spent a day on set for a pilot, so this week has been just great, however I've never known what day it was (today feels like...Wednesday maybe?)

Cupcake Tuesday-Chocolate Nutella and Salted Caramel

Yeah, it's possible to sneak that much goodness into just one cupcake.  It's mind blowing.




Remember my Chocolate Peanut Butter cupcakes?  Yeah this wins, hands down! (I mean it has Nutella in it, how can it not?) Oh and P.S. these really just these, but way better!

Sorry I've been so MIA recently this weekend.  I ended up last minute in the mountains with the fam and took what ended up being a much needed weekend off from the interwebs.  Sometimes these things just happen and you have to roll with it.  Sometimes things happen and you NEED to make these cupcakes, who knows.

Chocolate Cupcake
makes 24
2 sticks butter
1 cup sugar
2 eggs
vanilla
salt
1/2 cup cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
2 1/2 cups flour
1 cup sour cream

Preheat the oven to 350 degrees and line two cupcake pans.

In a large bowl whip together the room temperature butter with the sugar until they get nice and light and fluffy.  Add the 2 eggs and beat for about another minute.

When the eggs are fully incorporated add in the vanilla, salt and cocoa powder.  Mix well.

Next, measure out your baking soda, baking powder and flour in a medium bowl.  Add about 1/3 of the flour mixture to the butter mixture and beat until just combined.  Add 1/2 of the sour cream.  Follow that with another 1/3 of the flour, the last of the sour cream and the last of the flour, beating well after each addition.

Scrape the sides of the bowls and mix on last time to make sure it is all combined.

Scoop into the cupcake pans using a 2 oz ice cream scoop, or filling about 2/3 of the way full.  My rule with chocolate cake is that it should look like chocolate ice cream before it bakes

Bake for 18-20 minutes or until a toothpick comes out clean.  Let cool.


Nutella Cream Cheese Frosting
2 blocks cream cheese
1 stick butter
1/4 cup Nutella
3-4 cups powdered sugar

In a medium bowl combine the cream cheese and the butter with a mixer until it gets a little fluffy, this will take about 2 minutes.

Add in the Nutella and briefly mix until combined.

Now slowly add the powdered sugar, about 1/2 cup at a time, keeping the mixer on low to let it mix in. Once you have the right sweetness, scrape the sides and mix on medium for about 20 seconds to make sure everything is smooth.  The secret to this frosting is to whip it really well and make sure it's nice and light and smooth.  Everyone will be astounded.

Once the cupcakes are cooled, pipe the frosting onto the cupcakes.


Salted Caramel Sauce
1 cup sugar
1 cup water
1 teaspoon light corn syrup
sea salt
1/2 cup room temperature heavy cream

In a medium sauce pan stir together the sugar, water, corn syrup and salt.  Bring to a boil on medium-high heat.  DO NOT STIR.  If you stir the sugar while it is boiling it can knock crystals off the side and ruin your sauce.  

Boil for 7-10 minutes, make sure to keep your eye on this, it can turn from delicious golden brown to nasty burned in a split second.  You're looking for this boiling mixture to turn into a beautiful golden brown, caramel color.

Once this changes to our desired color STOP.  Remove it from the heat and whip out a wooden spoon.  Slowly add your room temperature cream (cold cream will cause the syrup to clump).  Stir constantly until all the cream is added.  Allow to cool for a bit.

Using a spoon or a squeeze bottle (the latter is certainly much easier) drizzle over your frosted cupcakes.




Sprinkle a touch of sea salt on top if desired and enjoy!

What a week!  My work life has been insane and subsequently my personal life has been entirely BORING!  I have spent a lot of time lounging around my house!  6 of the 8 pictures were taken inside my house, which seems rather unusual for me, but it's been pretty nice, I do love my apartment.

Can you see why I love it.  Check out how pretty it is, and this is just the view from my couch!

Budget With Me Wednesday-Week 6

Getting back on track is tough.  It's hard to correct your direction.  I kinda splurged this week, I don't even really know what happened.

Perfect is not the goal, improvement is the goal.  No one is perfect.

I'm making improvements, I'm striving for less spending, and I'll figure this out a little bit more.

This week was just a hiccup.  I'm going to move forward and not be concerned about the past, I'm just going to let it be.

Cupcake Tuesday-Peanut Butter Chocolate

Chocolate and Peanut Butter are such a classic combination!  It's just silly that it took me THIS long to get around to making a good chocolate peanut butter cupcake!  But I have hit my stride and this is the PERFECT way to do this cupcake!

Chocolate Cupcake
makes 24
2 sticks butter
1 cup sugar
2 eggs
vanilla
salt
1/2 cup cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
2 1/2 cups flour
1 cup sour cream

Preheat the oven to 350 degrees and line two cupcake pans.

In a large bowl whip together the room temperature butter with the sugar until they get nice and light and fluffy.  Add the 2 eggs and beat for about another minute.

When the eggs are fully incorporated add in the vanilla, salt and cocoa powder.  Mix well.

Next, measure out your baking soda, baking powder and flour in a medium bowl.  Add about 1/3 of the flour mixture to the butter mixture and beat until just combined.  Add 1/2 of the sour cream.  Follow that with another 1/3 of the flour, the last of the sour cream and the last of the flour, beating well after each addition.

Scrape the sides of the bowls and mix on last time to make sure it is all combined.

Scoop into the cupcake pans using a 2 oz ice cream scoop, or filling about 2/3 of the way full.  My rule with chocolate cake is that it should look like chocolate ice cream before it bakes

Bake for 18-20 minutes or until a toothpick comes out clean.  Let cool

Peanut Butter Frosting
2 blocks cream cheese
2 tablespoons peanut butter
1/2 cup marshmallow fluff
2-3 cups powdered sugar

In a medium bowl whip the cream cheese until smooth.  Add in the peanut butter and marshmallow fluff.

Once everything is well mixed, start slowing adding in the powdered sugar.  This can get too thick really quickly so go slow and take your time.

Pipe the frosting on to the cooled cupcakes and enjoy!
